Don’t get me wrong, I appreciate a fancy dinner out as much as anyone, but when the Ohio weather gets a little bit chilly or I’ve had a long day helping folks navigate their insurance policies, there is one thing that hits the spot every single time: a grilled cheese sandwich.
Believe it or not, National Grilled Cheese Sandwich Day is coming up on April 12th. Now, some people might say, "Rodney, do we really need a holiday for a sandwich?" To those people, I say: Have you ever had a perfectly toasted, buttery sourdough sandwich with three different types of melted cheese inside? Because if you have, you wouldn’t be asking that question!

A Little History (Because Everything is Better with a Story)
You might think that putting cheese between bread and heating it up is as old as time itself. While ancient Romans definitely did something similar, the grilled cheese sandwich as we know it today is a true-blue American classic.
It really took off in the 1920s. Why then? Well, two major things happened. First, a guy named Otto Frederick Rohwedder invented the bread slicer. Before that, you had to slice your own bread, which meant it was never even, and it was hard to get those perfect, uniform slices that make a sandwich stay together. Second, processed cheese became widely available and affordable.
But here is the fun part that I just learned: the U.S. Navy actually played a huge role in making the grilled cheese famous! During World War II, Navy cooks were looking for ways to feed thousands of hungry sailors quickly and cheaply. They started making "American cheese filling sandwiches" by the hundreds, often broiling them in large batches. Back then, they didn't even use a top slice of bread, it was an open-faced melt!
It wasn't until the 1960s that the second slice of bread became the standard, officially giving us the "grilled cheese" we love today.

As much as I love a homemade sandwich, sometimes you just want to let someone else handle the spatula. Being based in the Ravenna and Medina areas, we are lucky to be surrounded by some incredible local spots that know how to treat a piece of bread right.
If you’re cruising through Ravenna, you’ve got to check out some of our local diners. There is something about a diner flat-top grill that gives a grilled cheese a crust you just can't replicate at home. I’ve always found that the smaller, "hole-in-the-wall" spots in town serve up the most nostalgic versions, thick white bread and plenty of classic American cheese. It’s like a hug on a plate.
Over in Medina, the food scene has really exploded lately. If you head toward the Square, you’ll find places that take the "gourmet" route. We’re talking about artisan sourdough, caramelized onions, and maybe some local Ohio Swiss or goat cheese. It’s a bit more "fancy," but it still captures that local, home-cooked feel we love.

Now, if you’re staying in and want to whip something up for the family, let me give you a few tips from the Cook household. We take our sandwiches seriously around here.
- The Bread Matters: Don't just settle for the thin, floppy stuff. Get a nice, thick loaf of sourdough or a sturdy Italian bread. You need something that can stand up to the heat without getting soggy.
- The Butter Secret: Most people butter the bread. I like to put the butter directly in the pan, but here’s a pro tip: spread a thin layer of mayonnaise on the outside of the bread. It sounds crazy, but it gives you a perfectly even, golden-brown crunch and doesn't burn as fast as butter does.
- The Cheese Blend: Don’t just stick to one cheese! I like a mix of sharp cheddar for the flavor and Monterey Jack or Muenster for the "pull." If you want to get wild, throw in some Gruyère.
- Low and Slow: This is the most important rule. Don't crank the heat to high. You want the bread to toast at the same speed the cheese melts. Keep it on medium-low and be patient.
